Sheobul Busan Review: Korean Fine Dining at Westin Chosun Haeundae

Today I'm writing about Sherble, a Korean fine-dining restaurant on the 1st floor of The Westin Chosun Busan in Haeundae.

We went to celebrate my dad's 70th birthday (chilsun/gohuiyeon), and every single course was so good that I wanted to write it up as a proper, detailed review.

Reservations for Sherble open at exactly 11 AM, two months before your event date, and you have to book by phone — the phone lines get seriously competitive. For example, if your event is on September 7th, you need to call in at 11 AM on July 1st.

We still managed to pull it off by having a few of us call in at once~

A small welcome board greeted us right as we walked in.

We were there for a family celebration, and Sherble turned out to be a space that suits special occasions like this really well.

Now let me walk you through the Onsaemiro course, dish by dish.

The Onsaemiro course menu

The course is called Onsaemiro, which means "always unchanging."

It runs from a bite-sized amuse-bouche through octopus rice porridge, goldongmyeon noodles, fermented egg, steamed cod, sherbet, Korean beef striploin, seasonal rice and porridge, seasonal side dishes, and dessert.

Prices can shift a bit depending on the season, so I'd recommend double-checking when you make your reservation.

Amuse-bouche, the first bite of the course

The very first course, the amuse-bouche, already exceeded my expectations.

It comes as two bites — a crispy croquette-like piece and a seaweed cone topped with tuna and caviar — both sized perfectly for one bite, so they were easy to enjoy without feeling heavy.

The salty caviar paired with the tuna really woke up my appetite.

Octopus rice porridge

The second course was octopus rice porridge, and if you're a porridge person, you'll really love this one.

The rice grains still had some bite, and the chewy octopus made the texture fun.

It was lightly seasoned, which felt like a nice palate reset before the next course.

Goldongmyeon, a beautifully colorful mixed noodle course

Goldongmyeon was so pretty I couldn't not take a photo.

Thin julienned shrimp, Korean beef, and assorted vegetables are piled on top of noodles with a black sesame sauce, and once you mix everything together, this nutty flavor spreads through the whole bowl.

The portion is small, but as a mid-course specialty, it hit the spot.

Fermented egg course with soft-boiled egg and abalone

The perilla-fed egg course paired a soft-boiled egg with abalone, crab meat, and pickles.

Once you crack the egg open with a spoon, the rich yolk spills out, and eating it together with the abalone was surprisingly addictive.

Steamed cod

The steamed cod was cooked so the flesh stayed soft, with no fishy smell at all — very clean. I'm not usually a fan of steamed cod, but I ended up really enjoying this one.

Paired with a spicy shrimp sauce, it wasn't bland at all and had great depth of flavor.

Palate-cleansing sherbet

Right before the main course of Korean beef striploin, a sherbet comes out to cleanse the palate.

One spoonful of the sweet-and-tart sherbet and my mouth felt refreshed, which made me even more excited for the next course.

Finally, the main dish — grilled Korean beef striploin.

The outside had a nice char while the inside stayed juicy and pink, so the meat was full of flavor.

It was already delicious on its own, but placed over freshly cooked rice, it was pure bliss.

They said it's domestic Korean beef, and honestly, the texture was tender with zero gamey smell.

Along with the meat, they serve cauldron-cooked rice, seasonal porridge, and seasonal side dishes, and every single side dish was neat and well made.

The freshly cooked rice in particular was so glossy it was delicious even on its own.

Warm tea served toward the end of the meal

Toward the end of the meal, a warm tea comes out to settle your palate.

The subtle aroma tied together all the different flavors from the course in a really clean way.

The final dessert, pound cake and fruit

The final dessert was a pound cake topped with nuts and fruit.

It was sweet without being too much, which wrapped up the course on a satisfying note.

 

We visited for a family event this time, but based on the course and the service, I think this place would work just as well for a special meal with someone you love, or a relaxed outing for Korean fine dining.

Since it's a course meal, I'd recommend giving yourself plenty of time.

If you're looking for a proper, formal Korean dining experience around Haeundae, I'd recommend the Onsaemiro course at Sherble.

I think I'll be back again on another good day.
